1.准备好所有食材

2.澄面倒入盆中,加入煮开的水,一次性加入,同时不停搅拌,至澄粉全部烫熟,略显半透明为止把糯米粉、糖、猪油放入盆中

4.再把麦青汁倒入盆中

5.揉至完全均匀,盖上保鲜膜备用

6.咸蛋黄放入烤箱中,上下炎180度,烤12分钟出炉,冷却

7.用勺子压碎,有些颗粒亦可

8.把肉松倒入咸蛋黄中,加入沙拉酱

9.揉好的肉松蛋黄分成32克一个,备用

10.全部揉好的样子

11.把青团皮面团分成30克一个,搓圆备用

12.取一个青团放在手心压扁

13.把分好的肉松蛋黄放入青团皮中,用虎口把皮子慢慢往上推,最后捏紧收口

14.放入蒸笼,每个青团下面垫上一张油纸,开大火,大约蒸8分钟左右

15.出锅后,趁热刷一层无味的食用油防粘。
小窍门&温馨提示
1、蒸的时间一定要控制好,时间长了,青团就塌了,不是冷水上锅蒸,而是煮开的沸水后再蒸。
2、如果没有猪油,可以换成黄油,也可以替换成色拉油等液体油。
3、青团蒸好后常温下三天不发硬,也可以冷藏,最好一周内食用,也可以冷冻,吃之前上锅蒸熟即可。
